Polyphenols: what the rainbow actually does

Polyphenols are the plant kingdom's pigments and defence molecules. In us they behave less like vitamins and more like signals: nudging NRF2, dialling down NF-kB, sharpening insulin sensitivity at the margins.
Bioavailability is the catch
Most polyphenols are poorly absorbed in isolation. The interesting work happens when matrices are combined — curcumin with piperine, catechins with vitamin C, anthocyanins with fat — and when dosing is daily, not heroic.
