Heritage

The rind of Garcinia gummi-gutta (Malabar tamarind) has been sun-dried and used as a souring agent in Kerala and Sri Lankan cooking for centuries, and in Ayurveda as a digestive and carminative for heaviness after rich meals. Western interest followed the 1970s isolation of hydroxycitric acid from the fruit rind.
