Heritage
Lecithin was first isolated from egg yolk by French chemist Maurice Gobley in 1846 (the name comes from the Greek lekithos — egg yolk). Sunflower lecithin emerged in the 2000s as the clean-label, allergen-free alternative to soy lecithin.
